Hong Kong’s premier F&B incubator, PMQ Taste Kitchen, is proud to play host to modern Thai grill specialists Fat Legs’ BBQ this February.

Founded in 2017 by Hong Kong-based Australian-Thai chef Siam Sattayaphan, the concept draws inspiration from his unique experience while growing up in Thailand and multicultural Melbourne, Australia. Having worked in acclaimed restaurants such as Okra Hong Kong, as well as numerous catering events, Sattayaphan looks forward to expanding his repertoire by running a full-service restaurant in PMQ Taste Kitchen.

LUNCH ($78 per set)
Fat Legs’ BBQ and Twins Kitchen will collaboratively highlight the robust flavours of Thai street food with a distinct focus on grilled dishes, which are perfect for the current chilly weather. For LUNCH, Sattayaphan will offer straightforward favourites such as Khao Soi Kai (northern Thai chicken curry noodle soup) and Pad See-Ew (stir-fried wide rice noodles with pork, soy sauce and Chinese kale).

DINNER (A La Carte / Omakase menu at $288 per person)
Dinner will be a more comprehensive affair: the vibrant menu features Sattayaphan’s signature Som Dtum (freshly-pounded papaya salad, at $78), delectable fried starters, warm and hearty soups (Tom Sap Moo – a hot and sour clear broth with pork ribs, tomatoes and hay mushrooms, $88), and wholesome grilled meat and fish dishes— all of which are perfect for sharing. Loyal fans of Fat Legs’ BBQ will be happy to find the reprise of their popular homemade Sai Oua (Chiang Mai-style smoked pork sausage, at $88) on the menu. Diners looking for a more tailored, chef-driven experience, may opt for a kin khoa (chef’s choice, or “omakase”) menu, available at $288 per person (minimum of two pax).

This pop-up will also see the introduction of a comprehensive drinks list by a guest chef, with unique cocktails, beers and wines— all carefully chosen to perfectly pair with Sattayaphan’s dishes. The herb-forward Kaffir Lime Leaf Negroni ($98), for instance, is the perfect aperitif to start the evening with. Sattayaphan hopes to gain more technical and organisational experience in the setting of a larger kitchen.
